Stuffed Chicken Breast w/ Pesto & Prosciutto Preparation
Preheat oven to 450 degrees (F). Season each chicken breast with salt and pepper. Cut a slit down the center of the chicken breast being careful not to cut all the way through (make sure you cut on the horizontal so you have more room to stuff ingredients). Next, take 1 tablespoon of pesto and smear it inside the center of each chicken breast, followed with a piece of prosciutto and slice of Swiss cheese. Once complete, fold the chicken back together and place each breast onto a non-stick baking pan. Bake for 25-30 minutes or until cooked. Serve with pasta salad or any favorite side dish.
