This delicious chicken dish is first oven roasted and then finished under the broiler to attain perfectly cooked meat and crisp golden skin.
Place the garlic through a garlic press and add 3/4 tea salt and mix to form a paste
Mix the garlic paste, 1/4 tea black pepper, olive oil, lemon juice and basil or thyme in a small bowl and set aside
place the thighs in a large plastic zip lock bag with the garlic and olive oil paste and marinate for 30 minutes
Preheat the oven to 400 degrees
Remove the thighs from the marinate and reserve any remaining marinate
Slice the lemons into 8 slices and place in a broiler pan, place the thighs skin side down ontop of the lemon slices, add chicken broth to the bottom of the pan
Roast the thighs in the oven for 12 to 15 minutes, flip the thighs skin side up and brush them with the reserved marinate
Turn on the broiler and place the chicken on the upper rack under the broiler and broil chicken until the skin is crisp and dark brown about 2-3 minutes
Transfer the chicken to a serving platter, remove all but 2 tablespoons of the rendered fat accumulated in the pan and place ove high heat on top of the stove add white wine to deglaze the pan for 2 minutes and then pour sauce over the chicken and serve
can be used with chicken breast bone-in and skin on in place of thighs
