4 Boneless, skinless chicken breast halves
1 cup Fat free Italian Dressing
2 ounces Feta cheese; crumbled
1/4 cup artichoke hearts; chopped
5 Sun-dried tomato halves (not packed in oil); , blanched in boiling water until softened, chopped to 1/4 cup
2 tablespoon Chopped, pitted black olives; (Nicoise or Kalamata)
1 1/2 teaspoon Chopped fresh oregano
1 1/2 teaspoons Chopped fresh parsley
1 tablespoon Toasted pine nuts

Original recipe makes 4 Servings



Arrange the chicken breasts in a nonreactive dish and pour the Italian dressing over them. Cover, refrigerate, and marinate at least an hour or up to overnight.

Preheat the oven to 350 deg F. Coat a baking pan with cooking spray and arrange the drained chicken in the pan. Bake for 20 minutes.

Meanwhile, mix together all the remaining ingredients in a medium bowl.

Top each chicken breast with 2-3 tablespoons of the feta cheese mixture and return to the oven for 10 minutes more, or until cheese is softened. Serve at once.
