Salad of chicory and celeriac
|1 small celeriac; peeled and cut into thin matchstick strips|
|4 headschicory; washed and separated into leaves|
|1 stemparsley leaves; chopped|
|1 clovegarlic; peeled and finely chopped|
|10 capers; finely chopped|
|1 small dollopDijon mustard|
|1 small squeezeFresh lemon juice|
|1 tbspRed wine vinegar|
|2 tbspgood olive oil|
|1 tspWalnut oil|
|some salt and fresh ground black pepper|
|some blue cheese; crumbled (optional)|
|some walnuts; toasted (optional)|
