Original recipe makes 6 Servings
1 small celeriac; peeled and cut into thin matchstick strips
4 headschicory; washed and separated into leaves
the dressing
1 stemparsley leaves; chopped
1 clovegarlic; peeled and finely chopped
10 capers; finely chopped
1 small dollopDijon mustard
1 small squeezeFresh lemon juice
1 tbspRed wine vinegar
2 tbspgood olive oil
1 tspWalnut oil
some salt and fresh ground black pepper
some blue cheese; crumbled (optional)
some walnuts; toasted (optional)
