Pumpkin Muffins
Original recipe makes 24 Servings
| 1 cupsugar |
| 1/4 cupApplesauce |
| 1/4 cupCanola Oil |
| 1 egg; slightly beaten |
| 2 egg whites; slightly beaten |
| 16 ozpumpkin (can) |
| 1 cupAll purpose flour |
| 1 cupwhole wheat flour |
| 1 teaspoonbaking soda |
| 1/2 teaspoonground cinnamon |
| 1/2 teaspoonground nutmeg |
Pumpkin Muffins Preparation
Preheat oven to 375 degrees.
Combine sugar, applesauce, oil, eggs, and pumpkin. Mix together dry ingredients and stir into pumpkin mixture just until moistened.
Pour batter into greased and floured muffin pan. Bake 15-20 minutes. Let cool 5 minutes before removing to cooling rack.
