Original recipe makes 4 Servings
1/2 headCauliflower; Broken up
1 StalksCelery; Sliced
1 Carrots; Sliced
1 Onion; Rough chop
2 ClovesGarlic; Rough chop
1 TbspCurry powder or paste; Favourite
2 CupChicken or vegetable broth; Half carton
1/2 CanCoconut milk

Coconut Cauliflower Soup Preparation

Put vegetables into pot and add curry powder and broth. Add water if needed just till veggies are covered. Bring to boil then simmer for 20 minutes until vegetables are soft. Purée in blender and return to pot with coconut milk. Reheat till steaming and serve with salt and pepper to taste.

Notes

Cut veggies smaller to cook faster. Or, cut veggies chunkier to shorten prep time. Carrots take longest to cook so cut them smallest. You can also add a bit of grated ginger with veggies.
