Avocado and Mushroom Salad
Ingredients
Original recipe makes 6
| 1 wholeAvocado |
| 1/2 cSherry wine vinegar |
| 1/4 cWhole grain mustard |
| 1 lbWhite mushrooms |
| 1/8 colive oil |
| 1/2 cBasil leaves; chopped |
| 12 slicesItalian bread |
| 6 leavesButterhead lettuce |
| 12 ozRed bell pepper; diced |
| 12 ozGreen bell pepper; diced |
Avocado and Mushroom Salad Preparation
In a large bowl, mix oil, mustard, vinegar, basil and bell peppers. Set aside. Wash mushrooms and slice. Add to the dressing mixture and marinate for 10 minutes.
