When your garden is overflowing with bright green zucchinis - this is a recipe that you can cook and eat either hot or cold. One way to get children to eat their vegies too!
Grate unpeeled zucchini coarsely.Combine zucchini with chopped bacon, onion, flour, eggs, oil. Add salt and pepper to taste. Grease a square or oblong dish. Pour mixture into dish and sprinkle with grated cheese. Cook in moderate over (180C) for 30 to 40 minutes until brown on top and set. Cut into 6 slices and serve hot or into 16 smaller squares and allow to cool for serving as a salad accompaniment at a BBQ.
