This is a really light recipe great for the Spring or Summer. Serve the Sea bass on its own with the Sauce Vierge or if you fancy making it a bit more substantial serve it with tiny mini roasties or new potatoes.
This recipe will go well with any white fish if you didn't want to use Sea Bass.
To make the Sauce Vierge, place the oil, shallot, garlic, bay, thyme, lemon, peppercorns and coriander seed into a small pan and heat very gently for about 20 minutes. Do not allow to boil or let the shallot take on any color.
Once the sauce has heated, add the vinegar and herbs and tomato and stir gently.
Leave it to one side to allow the flavors to develop.
Fillet the Sea Bass
Lightly dust the skin side of the fish with flour
Heat the butter and oil in the frying pan, place the fish into the pan skin side down until crispy.
If you are using small Sea Bass fillets, baste the fish in the butter, it will take approx 3-4 minutes to cook.
If you are using larger fillets they can be popped on a baking sheet, skin side up and placed in the oven for 5-8 minutes.
Serve with the Sauce Vierge
If you make the Sauce Vierge the day before, it will give the flavors even more time to develop.
