| 2 cansFire roasted diced tomatoes, 14 oz |
| 3/4 cupVegetable broth |
| 4 clovesGarlic |
| 1 largeOnion; diced |
| 1 cupBrown rice |
| 1/2 poundBaby spinach |
| 1 canPinto beans, 14 oz; rinsed and drained |
| 1 tablespoonSoy sauce |
Goulash a la Sherman Preparation
Cook brown rice.
Sautee onion and garlic.
Simmer tomatoes, broth, garlic, onion, pinto, and soy sauce for 25 minutes on low after bringing to a boil.
Add spinach and stir for 5 minutes.
