Original recipe makes 15 Servings
2 poundshamburger
1 candiced tomatoes(rotel)
1 cangreen chilies; chopped
1 cancream of chicken soup
1 large canEnchilada sauce
1 packageflour tortillas
2 packagesmexican shredded cheese

Crock Pot Enchilada Casserole Preparation

Brown the hamburger, drain, and return to the pan. Add diced tomatoes(Rotel), green chilies, soup, and enchilada sauce, stirring till all are well blended. In a crock pot, pour half of the beef and sauce mixture. Tear tortillas into bite sized pieces and place a layer on top of the sauce mixture. Spread a generous layer(up to one package) of cheese on top of the tortillas. Repeat the layering process(sauce, tortillas, cheese). Heat on low 4 hours or on high for 2 hours. The enchilada casserole is done when the top layer of cheese is bubbly.
