this is the best baked potato soup i've ever made, its super cheesey too!

| 4 largeRusset potatoes |
| 2/3 cupButter |
| 2/3 cupflour; all purpose |
| 6 cupMilk; (any fat percentage) |
| 3/4 teaspoonsalt |
| 1/2 teaspoonpepper |
| 4 Green onions; chopped (set aside 2 Tablespoons) |
| 12 slicesbacon; cooked and crumbled (set aside 1/2 c) |
| 2 cupscheddar cheese; shredded (set aside 1/2 c) |
| 8 ouncessour cream; (regular, light or fat free) |
Cheesy Baked Potato Soup Preparation
1. bake potatoes, scoop out pulp and set aside. melt butter in pan on low heat. add flour stir until smooth. cook 1 minute. stirring constantly
2. gradually add milk, turn heat to medium stirring constantly until think and bubbly
3. add potato pulp, salt and pepper, 2T green onion, 1/2 c bacon and 1 1/2 c cheese.
4. cook until heated through
5. stir in sour cream
6. top servings with remaining bacon, cheese and green onions
