Spiced Sweet Roasted Red Pepper Hummus

We like spicy and sweet and this hummus is both. And easy too. Everything is popped into the food processor and pulsed into deliciousness. Cumin and cayenne add a bit of kick and pair nicely with the sweet, sweet roasted peppers. Makes lots.

15 ounceGarbanzo Beans; drained
1 cloveGarlic; minced
6 ounceroasted red peppers
1/2 teaspoonground cumin
3 tablespoonslemon juice
1/2 teaspooncayenne pepper
2 tablespoonstahini
1/4 teaspoonsalt
1/8 teaspoonOnion powder
1/8 teaspoonGarlic powder
1 tablespoonchopped fresh parsley

Spiced Sweet Roasted Red Pepper Hummus Preparation

In an electric blender or food processor, puree the chickpeas, red peppers, lemon juice, tahini, garlic, cumin, cayenne, garlic powder, onion powder and salt. Process, using long pulses, until the mixture is fairly smooth, and slightly fluffy. Make sure to scrape the mixture off the sides of the food processor or blender in between pulses. Transfer to a serving bowl and refrigerate for at least 1 hour. (The hummus can be made up to 3 days ahead and refrigerated. Return to room temperature before serving.)

Sprinkle the hummus with the chopped parsley before serving.
