Original recipe makes 1 Servings
200 mlwarm water; sponge
175 gramsflour; sponge
1/4 tspYeast; sponge
200 mlwarm water; dough
2 tbspolive oil; dough
2 tbspmilk; dough
325 gramsflour; dough
1 1/2 tspsalt; dough
1 1/2 tspsugar; dough
1/4 tspyeast; dough

Ciabatta recipe Preparation

1. Sponge:

Put water into bread machine pan. Sprinkle flour on. Indent flour with finger (but not to level of water) and add yeast into holes. Put dough cycle on for 5 mins to knead. Turn off and leave for 12 hours to rise.

2. Dough

Add water to sponge, then oil and milk. Sprinkle flour on top. Add salt and sugar in 2 corners. Indent flour; add yeast. Put on dough setting to knead and rise (1 hr for rising). Shape into 2 loaves on a lightly floured board. NB the dough is quite sticky and wet…it should be. Dust with flour. Leave to rise for 30 mins then bake at 220°C in oven.
