Original recipe makes 12 Servings
4 mediumtomatoes; chopped
2 mediumpotatoes; peeled and cubed
2 cupsgreen beans
2 smallzucchini; cubed
1 mediumyellow squash; cubed
4 smallcarrots; thinly sliced
2 celery ribs; thinly sliced
1 cupeggplant; cubed peeled
1 cupmushrooms; sliced
1 smallonion; chopped
1 tablespoonfresh parsley; minced
1 tablespoonsalt-free garlic and herb seasoning
4 cupsV-8 juice

Fresh Vegetable Soup Preparation

Combine all ingredients in a 5 quart slow cooker. Cover and cook on low for 7-8 hours or until the vegetables are tender.
