Fresh Vegetable Soup
|4 mediumtomatoes; chopped|
|2 mediumpotatoes; peeled and cubed|
|2 cupsgreen beans|
|2 smallzucchini; cubed|
|1 mediumyellow squash; cubed|
|4 smallcarrots; thinly sliced|
|2 celery ribs; thinly sliced|
|1 cupeggplant; cubed peeled|
|1 cupmushrooms; sliced|
|1 smallonion; chopped|
|1 tablespoonfresh parsley; minced|
|1 tablespoonsalt-free garlic and herb seasoning|
|4 cupsV-8 juice|
Fresh Vegetable Soup Preparation
Combine all ingredients in a 5 quart slow cooker. Cover and cook on low for 7-8 hours or until the vegetables are tender.
