| 2 celery ribs; thinly sliced |
| 1 cupeggplant; cubed peeled |
| 1 cupmushrooms; sliced |
| 1 smallonion; chopped |
| 1 tablespoonfresh parsley; minced |
| 1 tablespoonsalt-free garlic and herb seasoning |
| 4 cupsV-8 juice |
Fresh Vegetable Soup Preparation
Combine all ingredients in a 5 quart slow cooker. Cover and cook on low for 7-8 hours or until the vegetables are tender.
