Original recipe makes 4
1/2 Red onion; finely chopped
Salt and pepper
1/4 cfresh basil; Chopped
1/4 lbFresh mozzarella; finely chopped
4 tbolive oil
4 slItalian bread; Toasted
2 tbBalsamic vinegar; or red wine vinegar
3 Plum tomatoes; finely chopped
2 tbCapers

Tomato and Mozzarella Bruschetta Preparation

Preheat broiler. In a large bowl combine tomatoes, onion, capers, basil and mozzarella. Stir in balsamic vinegar and olive oil. Season with salt and pepper. Top toasted bread with the mixture and place on baking sheet. Broil until cheese melts. Serve hot. Alternative: Substitute 1 cup canned northern white beans for cheese and just top toasts with mixture. I thought it was good. My only complaint is that there was too much liquid, which made the bread soggy.
