Original recipe makes 6 Servings
2 Tomatoes, medium chopped
1 tbExtra Virgin Olive Oil
1 cBasil, fresh chopped *
Thin Cheese Slices for Top
1 1/2 cmilk
9 9" Prepared Pie Crust
2 Onions, medium chopped
6 Eggs
1 1/2 cCheese, grated, your choice

Tomato Basil Quiche Preparation

* 1/4 cup dried basil may be used Bake crust 5 minutes at 400. Lower heat to 350. Saute onion nad tomato until onion is soft. add basil and cook until wilted. Remove from heat, set aside. Beat eggs and milk together, set aside. Spread vegetables in crust, add grated cheese, pour milk mixture over, stir slightly. Top with cheese slices.
