Chorizo Taquitos
| 1 packagesausage or chorizo (16 oz) |
| 1 cupmedium chunky salsa |
| 1 cupcheddar cheese; shredded |
| 20-24 tortillas (burrito size) |
Chorizo Taquitos Preparation
Preheat oven to 400 degrees. In a large skillet, cook sausage over medium heat until browned. Drain sausage and set aside to cool. Stir salsa and cheese into the cooled sausage. Place 1 tortilla on a clean work area. Spoon desired amount of sausage mixture (1/8-1/4 cup approximately) down center of tortilla. Roll up tortilla and secure with tooth picks. Place on a foil covered cookie sheet. Repeat until tortillas are all filled. Bake until filling is hot and tortilla is crisp and golden, 15-18 minutes.
