Small fish bites, ideal for white reef fish. Bite size pieces are ideal for kids
Heat Cooking oil in deep fryer
Take 2 bread crusts (Wholegrain is best) and place in blender. Whizz till crumbed. Add the parmesan cheese and mix thoroughly. Spread on a plate
Cut Basa (or other white reef fish) into large cubes (1 1/2" across), remove any visible bones and set aside.
Whisk the egg lightly and stir in milk. Place in a bowl.
Put the flour in a freezer bag, and drop in a handful of fish cubes. Shake till fish are coated all over.
Dip each piece of coated fish in the egg mix, then roll in the breadcrumbs. Once all are done place in deep fryer.
They should be cooked when golden brown - around 5 minutes.
Serve with tartare sauce and slices of lemon or lime.
If cooking home made chips, start the oil earlier and cook these while making fish. You can add the fish for the last few minutes and tip them out all together.
