| 1 canPinto beans |
| 1 canChilli beans; You can use the hot ones |
| 1 canRed kidney beans |
| 1 canTomatoes; You can use Rotel instead |
| 1 tablespoonChili powder |
| 1 teaspoonCumin |
| 1 poundVelveeta Cheese |
| 1 cupSour cream |
| 1 bottleSalsa |
| 1 bagCorn tortilla chips |
| 1 smallTomato; diced |
| 1 cupCheddar cheese; shredded |
Creamy Tacos Preparation
Brown ground beef with onion. Drain (If you use ground sirloin there will be nothing to drain, because there is almost no fat in it - same as turkey actually.)
Blend in blender all beans and canned tomatoes. Put in pot. Add spices, beef and onion. Heat to boiling, then simmer 45 minutes to 1 hour. Add Velveeta and sour cream. Heat until all ingredients are melted.
Serve in a bowl over crumbled tortilla chips. Top with choice of toppings.
Crock Pot option: Instead of making it in a pot, put it into the crock pot on a low for a few hours. Then add the cheese and sour cream during the last hour. Put it on high if it does not appear that the cheese is melting.
