These cookies are a little labor intensive, but well worth the time.
Preheat oven to 375 degrees.
1. In small bowl, stir together sugar and cinnamon and set aside.
2. In medium bowl, stir together dry ingredients.
3. Cream butter in stand mixer. Add sugar and continue to mix.
4. Add eggs, corn syrup, and vanilla. Mix thoroughly.
5. Add dry ingrdients a little at a time, until blended. Chill dough for 1 hour if it is too sticky or difficult to handle.
6. Roll balls of dough about the size of a walnut then roll in cinnamon and sugar mixture. Place on un-greased sheet pan 2-1/2 inches apart. Bake for 10-12 minutes until puffed up and surface is slightly cracked. Let cool on the sheet pan a few minutes before removing to a wire rack to cool.
Makes about 6 dozen cookies.
