This bread has no nuts, but you can add a cup of your favorite nut at the end.
Preheat oven to 350 degrees.
1. In medium bowl combine flour, baking soda and powder, salt and cinnamon.
2. In large bowl, cream together eggs and sugar until smooth and creamy.
3. Stir in mashed bananas, vanilla, and oil. (You can substitute the oil for 1/2C+1Tbs of melted butter. Be sure butter has cooled slightly, but not stiffened, before adding to the mixture.)
4. Stir in flour mixture, a third at a time until just combined. Do not over mix.
5. Divide batter into two 9X5 loaf pans. Bake for about 45 minutes to 1 hour or until toothpick inserted in the middle comes out clean.
Makes 3 dozen mini muffins--bake 10 minutes
Makes 2 dozen mini loaves---bake 15 minutes
Makes 4 small loaves---------- bake 20-30 minutes
