Suggest a better descriptionMix well so there are no lumps (blender works really well). Heat a large skillet with a mixture of butter and oil (just enough so the batter won't stick) on medium-high heat. Pour approximately 1/2-3/4 cup of the mixture into the pan and tilt pan around so it spreads to cover the whole pan. These are THIN pancakes (like crepes). Cook one side until edges release from pan or brown to your liking. Flip over and cook until brown. Serve immediately or keep hot until ready to eat.
Our family sprinkles sugar on these and then rolls them up to eat them. Some people like them with whipped cream and fruit or custard too. They are a family favourite and so easy to make. If you are the cook, be prepared to be cooking while your family is eating. I will usually fry up the whole batch and put them on a plate in a warm oven to keep them hot and then when I am done I can eat with my family.
