| 8 ozpork loin; cut into thin strips |
| 8 ozDried wheat noodles; soaked in lukewarm water for 20 minutes |
| 1 tbspSunflower oil |
| 2 clovesgarlic; finely chopped |
| 3 spring onions (scallions); trimed and cut into bite size pieces |
| 3 tbspcurry paste |
| 1 tbspfish sauce |
| 2 tbspunsalted roasted peanuts; finely chopped |
| chilli oil; for drizzling optional |
| 2 tbspfish sauce; for marinade |
| 2 tbspsoy sauce |
| t tbsppeanut oil |
| 1 tspsugar |
Wheat Noodles with Stir Fried Pork Preparation
In a bowl, combine the fish sauce, soy sauce, peanut oil and sugar for the marinade, stirring constantly until all the sugar dissolves. Toss in the strips of pork, making sure they are well coated in the marinade. put aside for 30 minutes.
drain the wheat noodles. bring a large pan of water to the boil. drop in the noodles, untangling them with chopsticks, if necessary. cook for 4-5 minutes, until tender. allow the noodles to drain thoroughly, then divide them among individual serving bowls. keep the noodles warm until the dish is ready to serve.
heat a wok. add the oil and stir -fry the garlic and spring onions, until fragrant. Add the pork, tossing it around the wok for 2 minutes. Stir in the curry paste, and fish sauce for 2 minutes, adding a splash of water if the wok gets too dry, and tip the pork on top of the noodles. Sprinkle the peanuts over the top to serve.
