1. Melt the butter and stir in the flour. Cook for around 1 minute to make a roux then gradually add in the hot milk to make a thick white sauce.
2. Simmer for a minute then season with cayenne, lemon juice, salt and pepper. Remove the pan from the heat and stir in the cheese until it melts. Cool slightly then beat in the egg yolks.
3. Brush the insides of six ramekins with the melted butter and then coat with the breadcrumbs and nuts mixed together. Shake out any excess.
4. Preheat oven to 190c/375f/gas mark 5 and prepare a bain marie.
5. Whisk the four egg whites to the soft peak stage and then gently fold into the main mixture.
6. Place the souffles into the bain marie and bake for approx 12-15 minutes until risen and golden brown. You can serve at this point, but if you wish to twice bake leave to cool slightly then chill.
7. To serve the twice baked, reheat the oven to the same temperature. Run a knife round the inside of the ramekin and turn out onto a baking tray. Reheat for around 12 minutes.
