Preheat oven to 375ยบ(F)
Place a 12x12 square of foil on work surface. Spoon a teaspoon of BBQ in center. Add Chicken breast and add another teaspoon of BBQ on top. Top with 1/4 of one potato, red pepper, onion, oilive oil, onion powder, garlic powder, dash of cumin, and salt and pepper. Fold the foil into a packet. Repeat with three more packets. Place packets on a baking sheet and bake for 35 minutes.
Open foil packets with scissors and carefully pull back edges. Sprinkle 1/4 cup of cheese on top and place back in of unsealed for 2 minutes or until the cheese is melted
