Cooking method acquired from Warm Springs Restaurant in Ketchum, Idaho.
Heat BBQ to high heat and preheat oven to 325 degrees.
Sprinkle ribs with seasonings.
Put ribs on the BBQ just long enough to seer on each side (couple of minutes)
Place ribs on rack in a roasting pan that has been filled with water about 1/4 of an inch deep. The ribs must be on the rack above the water, not in the water. Beer can be substituted or mixed with the water. Cover the roasting pan with foil (shiny side down).
Bake the ribs for 2 1/2 hours.
Remove from the oven and cover with BBQ sauce.
Return to the BBQ grill and cook just long enough to carmelize the sauce.
Use your favorite BBQ sauce or serve the way Warms Springs Restaurant did, sauce on the side.
