A new twist on a family favorite!
1) Preheat oven to 400
2) Grease 9x11 casserole dish. (I use this size because the 9inch shells are the only organic ones my store carries.)
3) Combine spices, vegetables, beans, pineapple, ground turkey and 1/4 cup salsa into a large skillet over medium/high. Simmer until turkey is completely browned and most of the liquid has been absorbed.
4) Spoon 1/2 cup of meat mixture into a tortilla shell and sprinkle with a small amount of shredded cheese. This helps seal the burrito closed while baking.
5) Wrap the burrito and place it seam side down into the pan.
6) After pan has been filled with 5-6 burritos, spread any remaining meat mixture over top. Pour remaining salsa over top and sprinkle remaining shredded cheese.
Bake for 20 min or until cheese is golden brown.
Serve with your choice of toppings~!
I've seen a similar recipe use taco seasoning instead of my spice combination, but my family eats mostly organic food so we don't use that. You may want to bake your casserole longer, depending on how crunchy you would like your shells. I prefer mine a little softer.
