| 8 largeKalamata olives; (pitted, roughly chopped) |
| 1/4 cupFeta cheese; (crumbled) |
| 1 teaspoonDried oregano |
| 2 teaspoonsExtra virgin olive oil |
| Freshly ground pepper; (to taste) |
| 2 largeWheat hamburger buns |
| 2 slicesRed onion; (hamburger size) |
| 2 slicesTomato; (hamburger size) |
| Lettuce; (hamburger size pieces) |
| Pickles; (dill for me, bread & butter for Rose) |
| Non-stick cooking spray |
Kalamata-Feta Turkey Burgers Preparation
In large bowl, mix ground turkey, olives, cheese, oregano, oil and black pepper until well blended. (The mixture will be mushy, but will set well when cooked.) Spray a cold skillet with cooking spray and heat over medium-high heat until hot. Divide turkey mix into equal portions, form patties, and lay gently into hot skillet to maintain a nice burger shape. Turn burgers after about 8 minutes, and cook on other side for an additional 8-10 minutes. Place each burger on one of the buns, add lettuce, onion and tomato slices, and serve with condiments (yellow mustard is great for me).
