| 1/2 ccarrot; Thinly sliced |
| 1/2 cWhite vinegar |
| 2 tbFresh Cilantro; chopped |
| 1/2 tsSalt |
| 3 c; Peeled thinly sliced |
| 1 Clovegarlic; crushed |
| 2 tbSugar |
| 1 tsjalapeno pepper; Minced |
| 1 tsgingerroot; Peeled grated |
| 3/4 cBoiling water |
| 1/4 cgreen onions; Thinly sliced |
| 2 tbred bell; Finely chopped |
Thai-Style Cucumber Salad Preparation
Dissolve sugar in boiling water in a small bowl. Add vinegar; cover and chill 2 hours. Combine cucumber and next 9 ingredients in a bowl. Pour chilled vinegar mixture over cucumber mixture; toss gently. Yield: 5 servings (serving size: 1 cup).
