1 eachDried chiles; Ancho
1 eachDried chiles; Árbol
1 eachDried chiles; Pasilla
2 eachGarlic cloves
30 gramsOnion
15 mlVinegar
50 mlbroth shrimp; O fumet de pescado
mlOlive oil
gramsSalt & pepper
gramsLard
Onions
50 gramsRed onion
30 mlVinegar
gramsOregano
pinchSugar

Camarones a la diabla Preparation

Limpiar los camarones y salpimentarlos.

Asar la cebolla y ajo, desvenar los chiles, menos el pasilla, remojarlos en agua hirviendo por unos minutos.

Licuar los chiles, ajo, cebolla, caldo o fumet, vinagre blanco, y colar la salsa.

Maribar los camarones en la salsa por 30 min. aprox en refrigeración.

Escurrir los camarones, freir la salsa con un poco de manteca, sazonar con oregano, sal y pimienta, y agregar los camarones y coconarlos hasta que esten cocidos

Guarnición

Filetiar la cebolla morada, sumerguirla en agua hirviendo por un minuto y escurrirla.

Agregar el vinagre y sazonar con sal, pimienta oregano y azucar.
