Original recipe makes 8 Servings
1/2 headgreen cabbage; cored
1/2 headred cabbage; cored
1 lbcarrots peeled & shredded; peeled & shredded
1 large bunchcilantro; leaves roughly chopped
3 limes; juiced
2/3 cupneutral oil; such as peanut or safflower
2 teaspoonsugar
kosher salt & freshly ground pepper

Tri-Color Slaw w/Lime Dressing Preparation

Shred the cabbage finely in using a chef's knife, a mandoline, or a food processor's shredding blade.

In a very large bowl, toss together the shredded cabbage with the shredded carrots & chopped cilantro.

Whisk the lime juice & oil together in a bowl or measuring cup, then whisk in the sugar. Toss the dressing mixture with the slaw & season generously with salt & pepper (it may need more than you think it will at first. This salad definitely needs its salt!).
