Great simple and healthy sandwich that tastes great on a warm summer night with a glass of your favorite chilled white wine.

| 2 LoavesItalian bread; Sliced horizontally |
| 1 poundFresh mozzarella cheese |
| 6 smallRipe tomatoes, on vine |
| 1 CupPesto sauce |
| 3 wholeAvocados (optional addition); Peeled, (mashed or sliced) |
| 1/2 CupBalsamic Vinegar |
Italian Caprese Sandwiches Preparation
Slice the fresh mozzarella and tomatoes into even slices of approximately 1/4" - 1/2" thickness
Spread pesto on inside of both top and bottom bread slices.
Assemble the sandwich by adding fresh mozzarella. then tomatoes. If you choose to do so, add avocado. Sprinkle with salt, and pepper and drizzle with balsamic vinegar or vinaigrette.
Slice loaves to desired serving length.
Notes
Cibo Naturals brand pesto from Kirkland (Costco) works great. Use it generously.
