Ingredients
| 1 1/2 poundsBacon |
| 2 mediumOnions; Peeled and Thinly Sliced |
| 3 clovesGarlic |
| 1/4 cupCider Vinegar |
| 1/2 cupBrown Sugar |
| 1/4 cupMaple Syrup |
| 1/4 cupBoiled Cider |
| 3/4 cupCoffee; Strongly Brewed |
| 2 eachBay Leaves; Dried |
| 1 pinchSalt; To Taste |
| 1 dashPepper; To Taste |
Bacon Jam Preparation
Slice the bacon into 1" slices and cook in a large skillet until well browned.
Place the cooked bacon and all other ingredients in a 2 quart or larger crock pot.
Cover and cook over high heat for 3-4 hours.
Fish out the bay leaves and transfer the cooked jam to a food processor or blender.
Pulse until the consistency is to your liking, a soft, spreadable jam.
