Peanut Butter Oat Cookies / Granola Bars Preparation
Preheat oven to 350 degrees F.
Blend/process 1 cup of the oats in a blender or food processor until it resembles flour (I use the dry blade of my Vita Mix--works very well). Combine in a bowl with the remaining 3 cups of oats, salt, and cinnamon.
Add the milk, agave, canola oil, peanut butter, and nuts.
Grease a 9.5 X 13in pan (you can change size depending on how thick you want your bars to be) with some additional canola oil.
Press dough into the pan until it lies flat.
OPTIONAL: Sprinkle the uncooked bars with some additional flax seed, sunflower seeds, and agave (delicious!).
Cook granola bars for about 20 minutes or until edges are slightly browned.
NOTE: To make this recipe a cookie recipe, just roll the dough into balls and press them onto a lined cookie sheet. Sprinkle with nuts and agave if desired.
