Original recipe makes 4
4 Cod fillets; (1 1/4 lb)
28 ozTomatoes; drained, chopped
1 mediumOnion; chopped
2 tbolive oil
1/2 tsSalt; (opt)
1 tbCapers
1 tsOregano, dried leaf; crumbled
1 tbLemon juice
2 clovesGarlic; finely chopped
8 Black Greek olives; pitted
1/4 cBasil, fresh; chopped
1/4 tsPepper

Baked Cod Provencal Preparation

1. Preheat oven to 450F. Arrange fillets in 8x8x2" square baking dish. 2. Saute onion and garlic in oil in medium-size skillet over medium heat 3-5 minutes or until lightly softened. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using, and pepper. Simmer, stirring occasionally, 8 minutes. Spoon sauce over fish. 3. Bake in preheated 450F. oven for 10 minutes or until cooked through.
