An almost guiltless, creamy chicken casserole. Recipe calls for cream of broccoli soup, but any cream soup will be fantastic with it.
Preheat oven to 350 degrees.
Prepare rice as directed. Set aside.
In a skillet over medium heat, add olive oil. Coat chicken with Italian seasonings and add to skillet. Cook for approximately 7 minutes on each side.
In a small pan make cream of broccoli soup with only 1/2 can of water instead of a full can. Add cream cheese and mix until blended.
Assemble casserole in a 9 inch baking dish beginning with the rice. Place chicken breasts on top of rice and pour soup mixture over entire dish. Cover with foil and bake for about 20 minutes.
