Servings          
Original recipe makes 6 Servings
2-3 large zucchini; grated
1 Finely chopped onion
8 slices (smoked) bacon
2 tomatoes; chopped (optional)
6 Fresh mushrooms; sliced
1/4 cupVegetable oil
1 cup (heaped)Self raising flour
1 cup (heaped)sharp Cheddar cheese
4 Eggs
Black pepper; to taste

Zucchini Quiche Preparation

Place everything in (large) bowl except eggs - mix well.

Beat eggs and pour over mixture. (If mixture too runny, I add a tad more flour.)

Mix together.

Pour into well greased dish.

Bake in moderate oven (350F) for 30-40 minutes or until done (test with skewer).
