Zucchini Quiche
Original recipe makes 6 Servings
| 2-3 large zucchini; grated |
| 1 Finely chopped onion |
| 8 slices (smoked) bacon |
| 2 tomatoes; chopped (optional) |
| 6 Fresh mushrooms; sliced |
| 1/4 cupVegetable oil |
| 1 cup (heaped)Self raising flour |
| 1 cup (heaped)sharp Cheddar cheese |
| 4 Eggs |
| Black pepper; to taste |
Zucchini Quiche Preparation
Place everything in (large) bowl except eggs - mix well.
Beat eggs and pour over mixture. (If mixture too runny, I add a tad more flour.)
Mix together.
Pour into well greased dish.
Bake in moderate oven (350F) for 30-40 minutes or until done (test with skewer).
