A family recipe of easy and delicious cookies
Combine the first five ingredients. You may need a little more or a little less flour. Wrap a 1/3 of the dough in plastic and put in the fridge (or the freezer, if you are short on time).
Roll out the remaining dough on floured surface (no thicker than a 1/4") and transfer to a cookie sheet. Spread the marmalade or jam on top.
Take the saved dough out from the fridge/freezer and grate it over the jam.
Bake in 350F oven for about 10 minutes or until ready.
Cut into squares or diamonds (diagonally and then horizontally) while still hot.
Store in airtight containers.
Marmalade, black current, and strawberry jams/preserves are my favorite ones to use. If your kitchen is hot, you may want to put your dough in the fridge for several minutes before rolling it out.
These are great straight from the oven and after a night in the fridge!
