8 cupsWater
2 teaspoonsFresh ginger; finely diced
1/2 teaspooncardamom powder
1/2 teaspoonground cloves
2 tablespoonsdarjeeling tea; or other strong black tea
2 tablespoonsBrown sugar
2 cupsWhole milk
1 tablespoonHoney

Homemade Masala Chai Preparation

1. In a saucepan bring water, ginger, cardamom, and cloves to a boil. Reduce heat to a simmer and add tea, sugar, milk, and honey. Simmer 2-3 minutes, stirring occasionally to dissolve the sugar.

2. Strain tea into cups and serve hot.
