| 2 tbLow-sodium soy sauce |
| 2 tbPeanut butter |
| 1 tbDark sesame oil |
| 1 1/2 cShredded cooked chicken |
| 1 cTorn fresh spinach |
| 3 cCooked rice; cooled |
| 1/2 cSliced fresh mushrooms |
| Chopped unsalted peanuts |
| 2 Green onions; sliced |
| 1/4 cChopped salted peanuts |
| 1 tbChopped fresh mint* |
| 1 Garlic; minced |
| 1/8 tsGround red pepper** |
| 1 mdRed pepper; julienned |

Thai Chicken Salad Preparation
Combine rice, chicken, spinach, red pepper, mushrooms, peanuts, green onions, mint and cilantro in large bowl. Combine water, rice vinegar, peanut butter, soy sauce, sesame oil, garlic and ground red pepper in small bowl. Just before serving pour dressing over salad; toss.
