This is the perfect Hollandaise Sauce that my Mom always made! Serve over an English Muffin, thick sliced Ham and a Poached egg. SUPER!

Hollandaise Sauce Preparation
In small bowl, mix 3 egg yolks.
Set aside & in separate small bowl combine:
1/2 cup slightly melted butter (soft but not runny)
1 Tbsp. water
1 Tbsp. lemon juice
Dash of salt
While stirring eggs constantly, slowly pour & combine butter mixture into the egg yolks. Microwave for 45 seconds, stirring every 10 seconds.
Notes
The key to this recipe is to pour the hot butter mixture very slowly. If added to fast it will cook the eggs and result in lumpy sauce.
