Original recipe makes 12
2 tbSoy sauce
1/3 cCider vinegar
1/4 cpeanut butter; Smooth or chunky
1/2 cscallions; Sliced
1 tsGarlic; minced
2 mdRed bell peppers; cored
SALAD
1/4 cHot water
1 cCilantro leaves; chopped
7 cshrimp; Chilled cooked and
PEANUT GINGER DRESSING
1 tbfresh ginger root; Grated
3 mdcucumbers; Kirby pickling

Thai Pasta and Seafood Salad Preparation

Peanut-Ginger Dressing: Whisk peanut butter and hot water in a large bowl until smooth. Whisk in vinegar, soy sauce, sugar, gingerroot and garlic. Add remaining ingredients. Toss to mix. Makes about 12 cups/6 servings. For a spicier version, sprinkle with crushed red pepper.
