Coat a small nonstick skillet with cooking spray; place over mediume heat until hot. Add sliced mushrooms and onion; saute 3 minutes. Add oregano and garlic; saute 1 minute.
Add undrained tomatoes; cook 5 minutes, stirring occasionally. Remove from heat; set tomato sauce aside, and keep warm.
Combine beef and next 7 ingredients in a bowl; stir well. Divide mixture into 4 equal portions, shaping into 1/2 inch thick patties.
Coat grill rack wit cooking spray; place over medium hot coals (350* to 400*). Place patties on rack; grill 5 minutes on each side or until done. Top patties with cheese.
Place patties on bottom halves of buns; top each patty with 2 tbsp tomato sauce and top half of bun.
