1/4 cSugar
2 lbPork; or chicken; sliced
FOR PEANUT SAUCE
7 Mediumseeded dried chilies
FOR FOR MARINADE
2 1/2 tbGarlic; minced
1 tbGalanga (Kha); minced
2 tbCilantro roots; minced
1/3 cCreamy peanut butter; (do not
40 Bamboo skewers; (soak in
2 tbRed onions; minced
3/4 cThick coconut milk; for
1 tbIndian yellow curry powder
5 ccoconut; Medium consistency

Thai Satay with Spicy Peanut Sauce Preparation

In a blender or food processor, grind the listed ingredients, from lemon grass to salt, finely. Mix with the meat (wear latex gloves to do this, it stains) and marinate for 1 hour.
