salt and pepper; to taste
2 tbExtra Virgin Olive Oil
4 Links Aidells sun-dried
3/4 lbFresh tomatoes; coarsely
1 lbLow fat ricotta cheese
1 lbPenne pasta
3 cWashed spinach; coarsely

Baked Penne and Sun-Dried Tomato Sausage with Ricotta Preparation

Preheat oven to 350? F. While pasta is cooking to al dente, heat olive oil in a skillet. Saute sausage 2 to 3 minutes. Add spinach and cook until wilted. In a large mixing bowl combine sausage, spinach, tomatoes and ricotta. Mix pasta with other ingredients in a bowl. Adjust seasoning to taste.
