This was really easy to make the one thing that scared me was the making the roux I think it's called with the flour and the butter but it worked out! Bake potatoes. Cool. Scoop out pulp and set aside. Discard skins.
Melt butter over low heat and add flour. Add milk, until thick. Add potato pulp, salt, pepper, 2 tablespoons of green onion, 1/2 cup of crumbled bacon and cup cheese. Cook until thoroughly heated; stir in sour cream and heat through.
Serve with remaining green onions, bacon and 1/4 cup greens as garnish.

nsardo94 1 year agoI needed to add A LOT of salt and pepper. Plus extra milk, it's super thick. But other than that delicious! I also used frozen diced breakfast potatoes that are ready made instead of baking potatoes. Easy alternative & still was amazing! Great recipe(:
