Original recipe makes 20 Servings
1 quartBeets; peeled and shredded
3 tablespoonsDijon mustard
2 wholeShallots minced
2 tablespoonsFresh chives; minced
2 tablespoonsrice wine vinegar
1/2 cupolive oil pommace
3 tablespoonsHorseradish
1/4 tablespoonSalt and pepper to taste

Cornelia Beet Remoulade Preparation

Mix together mustard, shallots, chives, horseradish, rice vinegar, then whisk in oil. Add shredded cooked beets and adjust seasonings.
