"So good and so simple! I was making this as a side for fish, so I used vegetable broth instead. I also had to let it bake for 40 minutes for all the broth to absorb. Instead of mixing cheese in, I took off the foil and sprinkled a nice helping of the parmesan cheese on top and broiled it until the cheese was slightly browned. " - shortcakehugs

1/4 cFresh parmesan cheese --
Grated
1 cLong-grain white rice --
1/2 tsSalt
4 tbButter
UNCOOKED
2 Cloves garlic -- minced
2 cBroth -- chicken or beef

Baked Rice Pilaf with Parmesan Cheese Preparation

Saute the garlic and rice in the butter until golden. Pour into a casserole dish, add broth and salt. Cover and bake at 350 degrees for 25 minutes (or until the liquid is absorbed.) Add cheese and stir until cheese mixed in and rice is fluffy. Sorry but this has to much of a garlic flavor for me.

Omitted cheese (none in house) but this was good anyway!! Was looking for a baked rice side dish & this is a keeper! Much better than mix. Had to cook 40 min for all broth to be absorbed.

My kids scarfed it down! The younger 2 each had 3 helpings! I made double so it did take longer to cook but I figured it would. The only complaint was from my husband and he said there was to much butter which I think is just a silly thing to say.
