1 Clovegarlic; finely chopped
1/2 tsSalt
1 1/2 lbSalmon fillets; skinned
Ground pepper; to taste
3 tbFresh bread crumbs
4 tbExtra Virgin Olive Oil
4 tbFlat leaf parsley; chopped
1 tbDried Marjoram

Baked Salmon with Garlic and Herb Crust Preparation

1. Heat the oven to 400 degrees. 2. With a mortar and pestle crush the garlic to a paste. In a small mixing bowl combine the garlic, marjoram, parsley, breadcrumbs, olive oil, and salt. 3. Grind in a little black pepper and stir until you have a paste. 4. Cut the fillet crosswise into four pieces, lightly grease a baking dish with about 2 Tsp. olive oil, arrange the fillets with at least 1 inch apart. 5. Bake the salmon for about 5 minutes, remove from the oven, spread the paste mixture over the fillets and bake the salmon for another 5-10 minutes.
